Beer

At Cognition Brewing Company we plan to have many different styles of beer available and there will always be something new on tap to enjoy. We will have a number of regularly rotating beers as well as some seasonal releases. We will also have some very limited release beers that will be featured very briefly in the pub and mostly at beer festivals.

We will have different tiers of beer on our menu. We do this because not all beers should be priced the same. Like food, beer is a product that reflects the ingredients used. If we are serving a beer that uses twice the amount of grain and hops than that of a tier 1 beer then that will be reflected in the cost or serving size of the beer. Also, a lot of the beers that are expensive to produce usually have a lot more alcohol in them. By regulating serving sizes on these types of beers we feel that we are doing our job to take care of the well-being of our customers. It is easy to over-indulge if you are drinking beers with a high ABV. We will also have a tier 3 for very special beers that have extra costs associate to them like the purchase of oak barrels that we may age these beers in for added flavor and complexity. These beers will be served in small snifter glasses and may be unavailable for purchase in growlers.

Here are some of the beers that we will be serving at Cognition. NOTE: We will always be adding new beers to our repertoire so this list of a starting point for what is to become our beer menu.

Skeleton Wolves Red Ale

This is a Scottish 80 schilling with a pleasant malt profile and is very balanced and drinkable. Amber/Red in color with a malty aroma.

Kamadhenu’s Milk

Habanero-Lactose-IPA. This is a must try beer, loaded with flavor. Hop bitterness meets a subtle habanero heat that is backed up by an addition of milk sugar making the habanero flavor really stand out while adding to its drinkability.

SISUnator Dopplebock

Rich malty German-style lager, deep amber in color. Flavors of caramel, raisins and a hint of black cherry. This is a beer meant to be enjoyed in moderation and it is best to let it warm in the glass a little while as it lets the flavors really shine through.

In Bed with Danger Saison

Saison brewed with generous additions of Amarillo hops. There is a fruity and somewhat spicy yeast character with a dry finish and lots of citrus/estery aroma. This beer is brewed in honor of the Range Area Mountain Bike Association. A portion of all sales will be donated to R.A.M.B.A. to help them with all they do for local trails.

Bourbon Barrel Sans Regrets

Sans Regrets is our strong ale with a Munich malt base which lends a rich malt character. This version has been aged for 6 months in Bourbon Barrels from the 1792 Distillery in Bardstown, KY. It has a pleasant alcohol warming and a little bit of coconut and subtle vanilla and oak flavors that it has picked up from the barrels.

The King’s Dark Magician Oatmeal Stout

The King’s Dark Magician is an Oatmeal Stout that has a great roasted malt character with a little bit of hop bitterness is the finish. The oats give this beer a great cereal aroma worth sticking your nose into. This beer is dark and delicious and leaves you wanting another one.

Escape Pod Munich Helles

Escape Pod had a Pilsner Malt sweetness perfectly balanced with Mt. Hood hops. This is a light and enjoyable German-style lager with lots of flavor. Immediately a top seller in the Tap Room.

Pendulum Pale

Pendulum is the perfect beer for people who are looking for hops but want to enjoy a couple beers without overindulging. We thoughtfully crafted this beer to be low in ABV but still provide some malt character as well as a hop-focused flavor profile. We use a blend of base malts with some light caramel and honey malt additions to give this beer its well rounded flavor. Chinook, Cascade and Centennial hops star in this beer.

NeurosisPils
Neurosis Pils is a hop-forward Pilsner with a classic Pils malt backbone that is prettied up by Styrian Aurora hops which provide a floral hop flavor and aroma.

Shining Mountain Lager

We brewed this beer for the Marji-Gesick 100 bike race. Munich Dunkel is a dark German-style lager. Tis the season for Geman lagers. This one is malty and has a touch of acidity which comes through first and then leaves a bread crust and deep caramel note in the finish.
